Anyone that really knows me, understands that making soup is my jam! I love to make homemade soups that are quick and easy because my life can be pretty chaotic at times. Here are my top 5 soup recipes that I make for my family that are under 30 minutes to make, enjoy!

Zesty Corn Soup with Chicken

  • 2 tbsp unsalted butter
  • ¼ cup finely chopped fresh cilantro stems
  • 1 grated garlic clove
  • 1 10-oz frozen corn
  • 1 ¼ tsp kosher salt
  • 1/3 cup mayonnaise 
  • 3 cups chicken stock
  • 4 cups shredded rotisserie chicken 
  • Cotija cheese
  • Cayenne
  • 2 tbsp fresh lime juice


  1. Melt butter in a pan, add cilantro stems, and grated garlic. Stir fry until fragrant. 
  2. Add corn and salt and stir well.
  3. Boil the broth over high heat. Reduce the flame, simmer it for 8-10 minutes until the flavors blend in. 
  4. Whip the mayonnaise and lime zest in a bowl.
  5. Turn off the stove, add 1 tbsp. Zesty mayonnaise with lime juice and stir well. 
  6. Top up the soup with shredded chicken and cheese.

Garnish the enriched textures with chopped cilantro leaves, sprinkled cayenne, and smear the left lime mayonnaise on top. 

Tomato Basil Soup

Finely chopped: 

  • 1 small onion
  • 1 stalk celery
  • 2 tsp olive oil
  • 1 grated garlic
  • 1 tsp fresh thyme leaves
  • 2 cans diced tomatoes unsalted
  • 2 cups chicken broth


  1. Add olive oil in the saucepan and heat over medium heat
  2. Gently sauté the onions, garlic, and celery for 5 minutes
  3. Add basil, thyme, tomatoes, broth and bring to boil.
  4. Seethe the mixture for 10 minutes over low heat.
  5. Sit the mixture to cool a little.
  6. Opt for a hand blender or a food processor to puree the soup in little chunk consistency.
  7. Top it with basil leaves and drizzle a few drops of olive oil to savor the aromatic stew with garlic bread. 

Cream of Mushroom Soup

Treat your palate with a hint of cream that goes a long way when amalgamated with the chunks of mushrooms flaunting a creamy texture! An infallible balance dipped in sweetness and saltiness flooded with mouth-watering aromas; this one-pot soup is the coveted staple seasoned with the basic ingredients on your shelf.

  • 2 tbsp. butter
  • ½ pound sliced mushrooms
  • ¼ chopped onions
  • 6 tbsp. All-purpose flour 
  • ½ tsp. salt
  • 1/8 tsp. pepper
  • 2 cans (14 Oz) chicken broth
  • I cup half-and-half cream 


  1. Warm-up butter over medium heat in a saucepan. 
  2. Sauté mushrooms and onions until tender.
  3. Mix flour, salt, and pepper in 1 can of broth. 
  4. Stir till you get a smooth consistency.
  5. Add the mixture to the mushroom-onion mix. 
  6. Pour in the other can of broth and bring it to a boil. Stir for 2 minutes to get a thick consistency.
  7. Reduce heat, add cream, and let the mixture simmer uncovered for 15 minutes until flavors meld. 
  8. Top up the hot serving with cilantro leaves. 

Vegan Cauliflower Potato Soup

Nothing can beat the smooth and creamy nutritiousness when the veggies are blended into the comforting and delicious hearty soup. This Cauliflower and Potato soup is one of those comfortably sweet taste stews that are easy on the palate. Add a punch pack to the low-calorie recipe with vegetarian bouillon cubes to add to its flavorful aroma.

  • 1 tbsp olive oil
  • 1 minced garlic cloves
  • 1 potato diced
  • 1 large cauliflower, finely chopped
  • 3 cups vegetable broth
  • 2 bay leaves
  • Salt
  • Freshly ground pepper 
  • A pinch of nutmeg powder
  • Vegan cheese and green onions for topping


  1. Stir fry the onions in the olive oil in a stockpot over medium heat until tender.
  2. Add the potatoes and cauliflower to the pan, stir fry for a few more minutes.
  3. Pour in the broth and bay leaves, bring it to simmer.
  4. Cook until the vegetables are tender.
  5. An immersion blender comes in handy to get the consistency to your liking. 
  6. Season it with pepper salt and a dash of nutmeg.
  7. Top up with grated cheese and onions. 

Black Bean Soup

  • 3 (15 oz.) cans of black beans
  • 1 (15 oz.)  Can of tomato sauce
  • ¾ cup vegetable broth


  1. Use medium heat to simmer the oil in a pan.
  2. Add onions and garlic, stir fry till sautéed.
  3. Add in the spices; cumin, chili, cayenne pepper, black pepper, stir for 30 seconds.
  4. Add the black beans along with the bean juice to add a rich texture.
  5. Add tomato sauce and vegetable broth, bring it to boil.
  6. Simmer the pot on low flame for 25 minutes.
  7. Serve it hot, topped up with sour cream, cheese, and cilantro
